Ingredients:

• 1 x 120g Bag Rainbow Fresh Mesculin Mix ( or Rainbow Fresh Sweet Mix)
• 3 Peaches cut into wedges. (or nectarines)
• 1 red onion sliced into crescents.
• ¼ cup pumpkin seeds
• Shaved Parmesan
• Dressing
• 1 glove garlic
• ½ teaspoon ginger
• ¼ cup white balsamic vinegar (or apple cider vinegar)
• ½ cup olive oil
• Salt & pepper

Method:

Toast pumpkin seeds in a dry frypan or oven until they just start to change colour.

Toss peaches, onion and Sweet Mix together and arrange on a platter.

Whisk dressing ingredients and season to taste.

Drizzle dressing over salad, top with toasted pumpkin seeds and shaved parmesan and serve.

Chefs note:

Rainbow Fresh Sweet mix can easily be substituted for Mesculin mix
